Harvested at peak flavour ripeness, the Carmenere for the Lilly is quickly crushed and destemmed before being transferred to the press to separate the juice from the skin. Minimising juice and skin contact ensures the delicate hue and light tannin extraction while retaining delicate aroma and flavour. The fermentation is undertaken using aroma-enhancing yeast and carefully controlled with refrigeration. Once dry, Lilly is perfected using fresh skim milk.
