Description
A wonderfully textural, rich wine showing fabulous peach and sweet jasmine notes on the nose. The palate is seamless with lovely hints of spice on the finish.

Exceptionally ripe fruit from a wonderful vintage, was crushed into the press and layered with rachis for complexity and pressing quality. A slow long press cycle resulted with wonderfully aromatic and flavour rich juice, which was then portioned to mature French barriques for fermentation, 30% of which were indigenous. The remaining 30% of the juice was fermented in stainless to maximise fruit expression in the final wine. Post ferment the wines in barrique was kept on lees for approximately 6 weeks, put to tank with the unwooded portion and integrated during stabilisation. The final wine required a very light fining with fresh skim milk. No malolactic fermentation to maintain acid balance.
